Belgian Waffles

2 eggs, separated
2 C. flour
2 C. buttermilk
2 tsp. Baking Powder
1 tsp. Baking Soda
1 tsp. salt
2 T. sugar
1/2 C. oil
1 tsp. vanilla

Heat Waffle iron. In a small bowl, beat egg whites to soft peaks . In a large bowl, beat egg yolks with buttermilk. Add flour, Baking Powder, Baking Soda, salt and sugar. Beat till smooth. Add oil and 1 tsp. vanilla. Fold in egg whites. Bake in a greased Waffle Iron.
